Instant Pot Bacon And Bean Soup
I feel like life has been teasing me lately. School supplies are scattered around the house. I had to break out a sweatshirt the other night while Dustin and I were taking our nightly walk. Halloween decorations are out in all of the stores.
It went back to being 96 degrees outside.
All signs had pointed to fall! I was getting so excited. Bonfires, trick or treating, pumpkins, hoodies….and comfort foods! Mmmm…Comfort foods. Mac and cheese, chicken pot pie, soups….yum. We, and by we I totally mean Dustin, got a few made which gave me about a 4 day glimpse into what will be in a few weeks. (Although, I did what any rational person does when they are having a what-season-is-it-mid-year-identity-crisis and I went to the pool! haha!)
This Instant Pot bean and bacon soup is comfort food at its finest. Creamy. Bacon-y. Filling. Delicious. (Plus, if you are ever looking for a cheap meal, this is it!) This is an Instant Pot recipe, but can easily be adapted for the slow cooker. (Keep reading! I promise!) It is literally a chop, dump, set and forget dinner. (My favorite!) And it can be made ahead of time and frozen. (Winning!)
A few things before we start. The gear. You will want an Instant Pot. (And even if you are here for the bacon and bean soup, slow cooker version….you will want an Instant Pot. I promise!) True story: We talked about an Instant Pot for MONTHS. I finally decided to get one on Prime Day. The day before, we were at Goodwill and out on the cart came a brand new one. Still sealed. $15. I seriously screamed and leaped into the cart while they were still rolling it out. I’m sure they thought I was insane, but I didn’t care. We loved it so much, we bought another one (the next size bigger) and we use it at LEAST a few nights a week. Here is the one we have and use the most!
If you are making in the slow cooker, this is the slow cooker that I use and have used for several years. We also have two of them and they get used ALL the time. It’s held up amazingly and never fails me! Also, for insanely simple clean up, grab a slow cooker liner! Mess free. Woo hoo! 🙂
If you want to freeze your soups, I suggest using a vacuum sealer. You can freeze a whole batch or make your bags to individual size servings for lunches on the go. We are such a crazy busy family that this has seriously saved us. Some nights the kids are on their own for dinner while we run around town picking other kids up/dropping them off. Our teens can just grab an individual bag of soup and pop it in the microwave. EASY!
