Slow Cooker Cheeseburger Soup Recipe

Are you ready for warm weather?  I know that I am!  Using the slow cooker when the weather gets warm.  During the warmer weather months our electric bill usually goes up from using the air conditioning.  And if that wasn’t torture enough, using the oven to cook warms up the house all over again!  Luckily your slow cooker can help!  Don’t heat up your home any more than you need to!  This year, use your slow cooker!

This Slow Cooker Cheeseburger Soup is really delicious.  You may not think that soup in the summer sounds very appealing, but this isn’t your winter kind of soup!  Cheeseburgers always make me think of BBQ’s and cooking out with friends!

  1. In a large skillet brown the ground beef. Drain the beef and rinse to make sure the fat is rinsed off.
  2. Dice the tomato and onion and set aside. Slice the carrots and celery into ¼” thick pieces. Cut the potatoes into ½” cubes, leaving the skin on. Mince the garlic.
  3. Combine the beef, all of the vegetables, seasonings, and chicken broth in the slow cooker. Cook on high for 4 hours. (You can also cook on low for 6-8 hours.)
  4. After 4 hours of cook time add the shredded cheese to the slow cooker, stirring to combine.
  5. Mix the heavy whipping cream and corn starch together. I like to put mine in a mason jar and shake as it seems to work best to make sure the corn starch dissolves. Pour the mixture into the soup and stir well.
  6. Cook the soup for an additional 30-40 minutes in the slow cooker.
  7. Serve hot with crumbled bacon, dill pickle slices, and a little shredded cheese.

I often brown up several pounds of ground beef and freeze it unseasoned for using in tacos, chili, soup, spaghetti sauce and other recipes.  This cuts down on my cook time the day of.  For this recipe pull the frozen ground beef from the freezer a day ahead and let it thaw in the refrigerator.  Then the whole recipe can be made it the slow cooker the day of!
