I use my slow cooker almost everyday.  No joke!  Every. Single. Day.  Majority of the time I use it to make an easy slow cooker dinner.

Sometimes I use it because I’m going to be out all day and I want dinner ready when I get home.  Or even because I want breakfast waiting for me in the morning!

I use it because some meats just taste better roasting all day.  Or I am feeling lazy and don’t want to have to do a lot of clean up.  (Thank you slow cooker liners!)

Sometimes I use it because it’s hot outside and I don’t want to heat my whole house up even more with my oven.

I work from home and sometimes it’s just easier for me to start dinner at noon before kids get home from school.

Whatever the reason of the day is, I use my slow cooker non-stop.  One slow cooker dinner that we make quite often is stuffed shells.  They are crazy easy to make and a cinch in the slow cooker.

  1. Line your slow cooker with a slow cooker liner. This makes clean up so easy!
  2. Pour a nice layer of sauce in the bottom of your slow cooker.

  3. In a bowl, mix together the Ricotta cheese, egg, and Parmesan cheese.
  4. If you like spinach, add to the cheese mixture. I love spinach in my pasta, but my family only likes a little bit so just add to your family's preferences.

  5. Mix together.
  6. Spoon the mixture into the shells. You don't have to pre-cook the pasta!
  7. Place the shells on the layer of marinara sauce inside the slow cooker.

  8. Cover the shells with a nice layer of marinara sauce. Top with mozzarella cheese.
  9. Cook on low for 6-8 hours or high for 3-4 hours.

This is a very basic recipe.  Feel free to brown some Italian sausage and add to the shells before cooking too!
