Instant Pot Bacon and Bean Soup
This Instant bean and bacon soup is comfort food at its finest.  Creamy.  Bacon-y.  Filling.  Delicious.  (Plus, if you are ever looking for a cheap meal, this is it!)  This is an Instant Pot recipe, but can easily be adapted for the slow cooker.  (Keep reading!  I promise!) It is literally a chop, dump, set and forget dinner.  (My favorite!)  And it can be made ahead of time and frozen.  (Winning!)
  1. Prep your veggies! Dice the carrot, celery, and onion and add to the Instant Pot.
  2. Empty the entire jar of beans into the pot (including the brine) over the veggies.
  3. Cut the Jowl Bacon to bit size pieces and also add to the pot.
  4. Pour 1-1 ½ cups water, just enough to barely cover the ingredients.
  5. Season with salt, pepper, and 1 ½ tsp each garlic powder and onion powder. Stir to mix.
  6. Seal the lid and set the Instant Pot setting to Chili – 35 mins.
  7. Once done release the pressure valve.
  8. Once the pressure is all out, serve. Enjoy! (Goes great with cornbread!)
