School is back in session and so we are getting back on a schedule at our house.  And by schedule, I mean that some nights dinner can be a scramble!  My slow cooker comes in so handy this time of year for making quick dinners.  As a work at home mom, when Joshua is back in school, I work more.  So my slow cooker isn’t just for quick dinners.  I can cook a big batch of some of my favorite foods so I have easy lunches.  For me and the kids!

We love Chicken Caesar Wraps.  This Chicken Caesar recipe is awesome for making a batch to keep in the refrigerator.  Top it on salads or add it to wraps and you have an easy meal.

  1. In the slow cooker, add 1-2 cups of water. Then place the chicken inside the slow cooker. Cook for 4-6 hours on low heat.
  2. Remove the chicken and place on a cutting board. Drain the water from your slow cooker.
  3. Shred the chicken. I don't shred mine a lot, but into bite size pieces.
  4. Put the chicken back into the slow cooker and add the dressing, starting with 1/2 a cup. Mix well. Cover and cook for 30 minutes on high.
  5. Add the cheese, pepper and parsley before serving.
Recipe Notes

This dish chicken is perfect for keeping in the refrigerator or freezer.  Add to wraps, sandwiches or salads.
